Structured Water Science
Structured water, down to the very molecule, is said to offer a range of increased benefits and life force to humans. Molecular analysis supports the science behind this by proving the fundamental difference between structured and standard water.
The science of these benefits is far more complicated than that though, and has to do with the energy contained in the H2O molecule. Professor Pollack termed his findings as Exclusion Zone (EZ) water, and found that when water is situated near surfaces, it differs from bulk water. In his experiments, Pollack looked to identify the difference in the structure of the near-surface exclusion zone. He discovered that using extremely hydrophilic water and pouring it onto the surface triggered EZ layer growth, building progressively, layer by layer, beyond the conventionally considered molecular layers.

Hydrophilic surfaces contain oxygen atoms, and Pollack proposes those surface-oxygen atoms form a template creating the first EZ plane. A honeycomb hexamers sheet model could account for the EZ net charge, plus it builds on the evidence for a long-range ordering structure known with the solid form of water (ice).
Far-Infrared Rays
Pollack also uncovered under his microscope that light – particularly on the infrared spectrum of sunlight – is absorbed by water, builds EZ layers and maintains the charge separation. The water molecules oscillate when exposed to the oscillating actions of far-infrared (FIR) rays with similar wavelengths, causing the water molecules to break into hydrogen and hydroxide ions. When influenced by far-infrared, the breakdown of the water molecules makes the size of the water clusters smaller and is referred to as ‘activation of water’.
